I'm a fresh fruit and vegie kind of gal. Now that fall is here and the garden has given me the last of her bounty, I'm craving the freshness even more. Luckily, I can go to the in-door farmers market or food co-op and pick up more. Unfortunately, fresh is subjective. Most of the fruit we get here in the Midwest comes by truck from either Florida, California, or Mexico. I can't help it, I've been craving fresh pineapple.
So I succumbed to my craving and bought four...yes, four whole pineapples at the warehouse store. Now mind you I spent $2 for each which is much cheaper than buying the same amount (by weight) in the can or through the deli. (Although at the deli they have this handy, dandy little machine to peel and core them.)
Now I'm sure there are 100's of YouTube videos on how to cut a whole pineapple but guess what, my computer is in my office and I've dropped my smartphone in a sink full of water one too many times, so I had to figure it out for myself.
For those of you who don't know, I have rheumatoid arthritis. Most days you wouldn't even know unless I have to grip something tightly. Then it's a crap shoot whether I'll be able to hold on to it.
Earlier this spring I went to a garage sale and bought an electric knife for a couple dollars. Why? I have no clue...until now. See, with a regular chef's knife, I don't have the hand strength to cut through the pineapple's tough exterior. BUT with the electric knife it worked wonderfully.
So if you have carpal tunnel syndrome, fibromyalgia, RA, osteoarthritis, or any hand injury or weakness, I recommend getting an electric knife. I'm going to tackle my pumpkin for canning next and then who knows...
